Grilled Vegetables are a favorite in this house. Now that the Farmer’s Market is bursting with freshness, I simply slice these goodies and plop em’ in a large mixing bowl, drizzle with olive oil, season and gently mix with a rubber spatula. On the grill they go. You can use almost anything to season, but one of my faves is “Rocky Mountain Seasoning” from Penzey’s Spices. Simple salt, pepper and thyme does the job nicely as well.
